What do you think about this? Is there something at a commercial level on the market?
I like the fact that it also vacuums it up.

I found this (without the vacuum on a German website):

What are your thoughts?

I think those are commercial. I've seen a number of professional detailers use them.

I didn't realize it connects to a vacuum - I was concerned it was just blasting the grime deep into the upholstery instead removing it.

That's a detailing tool. I wouldn't see it as a self-serve car wash option, if that's your question.

Our detail shop uses tornador guns, but not ones with a vac attachment.

Are you happy with those guns? Do they work or are they a gimmick?
Is there a reason why they shouldn't be used as a self serve option (maybe next to the vacs)?
I would give it a go if it came with a compressor but unfortunately, my vac area is too far away from the compressor.

Yes they work. No they are not a gimmick. I wouldn't offer them for vacuum customers at a self-serve. It's more of a specialized detailing tool. I don't think they would hold up to abuse.
