Whether you are going to a PLC or just settle with your relay approach ... it is IMHO a good idea to separate all of the distinct voltage circuits on a basic ladder logic diagram. That just consists of simple rungs showing where & how a circuit within a specific voltage circuit...
Those old style aquastats & thermostats tend to not have the ability to "tweak" the turn off point & the turn on point (differential). That is why we replaced most of those that we had with more modern temperature digital controls.

Since a generator was mentioned: I just scouted out a natural gas generator price-wise for my house ... total (with installation) costs were very high. Especially if generator chosen had enough wattage to charge an EV within a reasonable amount of time.
