Stainless fittings

What type of stainless fittings do you guys use to build high pressure manifolds? The standard cast 150 class (very common) is rated for 150 psi or 300 psi depending on where you look but I have seen them plumbed into touchless machines without issues. Am I missing something?
 
I've used some low pressure stainless fittings on bay manifolds and don't think I've had one crack yet. My tire cleaner eats brass for breakfast.
THe previous owners used galvanized t's, Ive grown to hate galvanized, but in one or two places when something fails like the city mainline freezes they split and I assume saves other fittings from the same fate. Galvanized and black iron sch40/20 isn't rated for much pressure but I've seen them used for hydraulics on equipment pushing way more pressure than we run without issue. Im not scared of using the cheap stuff on HP as long as your using weep handles. The spike from the off handles can get brutal for a micro second.
 
I buy all my stainless steel fittings from Menards. They are pretty cheap there. They are only rated for 300psi but I have used them on high pressure applications for years and years with not a single failure. Even peco builds their high pressure wheel blasters and manifolds with 150 class fittings.
